| Cibolo Moon - A Taste of San Antonio |
Cibolo Moon the Resort's casual restaurant will specialize in Hill Country cooking with a keen eye toward sourcing the best local ingredients available. The menu will embrace the diverse Hill Country culture and prosperity of the region to create a unique dining experience that is quintessential San Antonio.
At breakfast the chefs will integrate Mexican specialties into the menu such as breakfast burrito made with fresh tortillas, egg, frijoles, chili con carne and Oaxaca cheese. Every morning chefs will be busy in the open kitchen cooking omelets to order and keeping a watchful eye over the bountiful breakfast buffet.
During lunch chefs will hand forming fresh tortillas to be used in sizzling fajitas platters featuring freshly grilled beef skirt steak or chicken. The tableside guacamole will steal the show at lunch and dinner, who can refuse fresh made guacamole made to your liking with freshly made tortillas and tasting of roasted salsas. The salads and sandwiches will utilize the finest local seasonal ingredients.
Sandwiches will be oversized and unique from the BLT with fried gulf oysters and chili mayonnaise to the chicken fried steak sandwich it will always be a tough choice.
Great BBQ Brisket will come from the smoker in our exhibition Kitchen, as our chefs will prepare Texas baby back ribs so tangy, sweet and spicy they will soon become legendary. All the dishes will be accompanied by a stack of house made pickles. Side dishes will include German style potato salad or spicy buttermilk onion rings.
In addition, there will also be honey fried chicken, pan roasted trout, bison meatloaf and local sausages, to name a few.
The dessert menu will be simply irresistible, who can walk away from a warm gooey brownie sundae with hot home made fudge with butter pecan ice cream or peach and blackberry buckle with a house churned ice cream?

| Award Winning Chef Ryan Joins The Team |
JW San Antonio Hill Country Resort & Spa named Ryan Littman as Executive Chef. He will be responsible for the Resort's restaurant and banquet menus.
Chef Littman received his Culinary Arts degree from Pennsylvania Institute of Culinary Arts in Pittsburgh, Pennsylvania in 1991, and has held many culinary positions with Marriott Hotels and Resorts in the past 18 years. Chef Littman served as Executive Sous Chef at the JW Marriott Desert Springs in Palm Desert, California. The desert was a perfect fit for Littman as he continued to shine, winning Culinarian of the Year in both 1997 and 2001.
In 2003 Chef Littman was awarded his Certified Executive Chef title by the American Culinary Federation.
In 2005, Chef Littman was named Executive Chef at JW Marriott Starr Pass Resort & Spa in Tucson, where Littman earned Marriott International's prestigious "ACE" award for culinary excellence naming him Marriott's "Chef of the Year for 2006-2007.
